{"id":3179,"date":"2011-06-08T19:25:33","date_gmt":"2011-06-08T17:25:33","guid":{"rendered":"https:\/\/www.boatbookings.com\/blog\/?p=3179"},"modified":"2011-08-11T16:56:48","modified_gmt":"2011-08-11T14:56:48","slug":"leek-mushroom-and-feta-filo-rolls-a-favorite-recipe-from-the-galley-of-nauticat-of-fowey","status":"publish","type":"post","link":"https:\/\/www.boatbookings.com\/blog\/2011\/06\/08\/leek-mushroom-and-feta-filo-rolls-a-favorite-recipe-from-the-galley-of-nauticat-of-fowey\/","title":{"rendered":"Leek, Mushroom and Feta Filo Rolls: A Favorite Recipe from the Galley of Charter Catamaran NAUTICAT OF FOWEY"},"content":{"rendered":"<p><strong>Leek, Mushroom and Feta Filo Rolls<a href=\"https:\/\/www.boatbookings.com\/blog\/wp-content\/uploads\/2011\/05\/Screen-shot-2011-05-27-at-10.41.46-AM.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-3181\" title=\"Screen shot 2011-05-27 at 10.41.46 AM\" src=\"https:\/\/www.boatbookings.com\/blog\/wp-content\/uploads\/2011\/05\/Screen-shot-2011-05-27-at-10.41.46-AM-254x300.png\" alt=\"\" width=\"254\" height=\"300\" \/><\/a><\/strong><\/p>\n<ul>\n<li>First make your filling.<\/li>\n<li>Wash and finely slice <strong>3 leeks and a handful of Mushrooms.<\/strong><\/li>\n<li>Gently saut\u00e9 these in a pan in a little olive oil with a couple of sprigs of Thyme and seasoning to taste.<\/li>\n<li>Mix in 3 \u2013 4 oz of crumbled <strong>Feta cheese <\/strong>or you can use<strong> goats\u2019 cheese <\/strong>if you prefer and allow mixture to cool while you prepare your filo.<\/li>\n<li>Take one packet of filo and carefully open out the sheets and lay them on a board and cover with some cling wrap to keep them moist.<\/li>\n<li>Melt one stick of butter in the microwave.<\/li>\n<li>Take a sheet of filo and lay it on your work board \u2013 brush it carefully with the melted butter. Lay a second sheet on top. Cut the two sheets into three sections to give three oblongs and brush around the four edges of each one. At the top end of each place a small tight bundle of your leek mixture and fold in the top and the two sides all the way down. Roll these up into cigar shape parcels and place onto a baking sheet with the seam underneath.<\/li>\n<li>When all complete \u2013 brush the tops with beaten egg and chill down in the fridge of an hour or so.
